Champagne Brut - De Castellane
The de Castellane Champagne house in Epernay was established back in 1895 by the Viscount Florens de Castellane. In 1999 it was taken over by the Laurent-Perrier group, but the champagnes are still made according to the "de Castellane style". The winemakers' attachment to the long tradition of the House's quality is reflected in this wine and illustrates the richness and finesse of its style.
It is a balanced blend of the three champagne grapes (35% Chardonnay, 35% Pinot Noir and 30% Pinot Meunier) to which around 15% reserve wine is added to guarantee consistency. The grape varieties are vinified separately and the winemakers will follow the evolution of each wine with regular tastings and with tests carried out by the quality control laboratory. They closely monitor the maturity of the wine and chose the right time for fining and ridling. The cellar master add a final touch to the wines with the dosage liqueur, which contributes to the consistency and character of each champagne of the de Castellane range.
