Prephylloxera - La Vigna di Don Peppino 2021 - Etna Rosso D.O.C. - Tenuta delle Terre Nere
The vines for the Prephylloxera grow in Calderara Sottana in the midst of a larger vineyard that have survived the phylloxera decease. They, therefore, are over 130 years old and stand on their original rootstock. Its elegance is measured, its authority understated, its sophistication effortless. A grand wine.
The Nerello Mascalese grapes for the Prephylloxera Etna Rosso were hand picked and fermented under controlled temperature. Spontaneous malolactic fermentation and ageing took place in in French oak barriques and tonneaux. After 16-18 months of wood ageing and 1 month in steeltanks the wine was bottled.
