The Ancestral Method is a winemaking method is a process dating back to ancient times that maintains a naturalness of the grapes. At the time of harvest the grapes undergo an immediate pressing of the bunches; then cold static decantation and partial fermentation at a controlled temperature take place in stainless steel tanks. Fermentation is blocked at a precise sugar content, necessary to ensure the resumption of the fermentation after bottling and, without the further addition of sugars and yeasts, the wine finishes the alcoholic fermentation in the bottle. The wine is left to mature unfiltered in the bottles for a period before release.
