Extra Brut Metodo Classico - Terre Siciliane IGT - Az. Agr. COS
Azienda Agricola COS was founded in 1980 by Giambattista Titta, Giusto Occhipinti and Rino Strano, three friends who wanted to recreate wines in the same way as their ancestors. Today it is one of Sicily’s most well-known wineries. Their wines are natural wines and are extremely low in sulphites and are mainly fermented and aged in terracotta amphoras like in the old days.
The Frappato vines for the Extra Brut sparkling wine grow in the Cos vineyards near Vittoria in southeastern Sicily at an altitude between 250-300 m. The vines that have an age of around 15 years grow in red soil of medium consistency; made up of subalpine sands composed of limestone and silica.
The grapes were harvested by hand, sorted, destalked and pressed followed by the fermentation in amphora using natural yeasts. The Second fermentation and ageing in the bottles lasted for 54 months. The dègorgement was made with unfermented must from the subsequent vintage with no added sugar or yeast resulting in this fine pinkish extra dry sparkling wine.
