Castello della Sala is located in Umbria, near the historic city of Orvieto – a region exceptional for producing white varieties. Castello della Sala, a magnificent medieval manor with 170 hectares of vineyards located between the Paglia river and the summit of Monte Nibbio. The clayey and calcareous soil vineyards are located at an altitude of 220 – 470 m. The wine takes its name from first proprietors of the Castello della Sala, and the label shows the 13th century Saint John’s Chapel situated on the estate.

The straw yellow Conte della Vipera wine is produced from Sauvignon Blanc and Sèmillon grapes. The grape clusters were hand harvested and immediately brought to the cellar where they were cooled down before pressing to preserve characteristic varietal aromas. The grape varieties were fermented separately in stainless steel tanks at a low controlled temperature. Following fermentation the wine was blended, so that the fresh, vertical and slightly aromatic Sauvignon wine was blended with soft, tropical Sèmillon, the two grape varieties complete each other.
