Etna Bianco D.O.C. - Cottanera
The Cottonera production philosophy is to create an enterprise model which brings tradition and innovation together in the vineyards, as well as the winery. In the vineyards grapes are grown without an irrigation system and nearly all operations are carried out by hand. On the 65 hectares of vineyards both autochthonous and international varieties are grown. The land is unique and gives rise to an extremely variable diversity of vines.
The grapes were harvested manually and carefully sorted. Following a gentle destemming the wine fermented at controlled temperature. The refining of the wine lasted 6 months in stainless steel tanks followed by ageing in the bottle.

- It is full bodied but well supported by the acidity that gives the tasting a rare persistent freshness.

- Stewed fish, fresh cheeses, seafood risotto, and grilled fish. Serve at 8-10 C.
