The Sauvignon Blanc vines grow in different combination of soils, from clay to lime and gravel giving this wine its unique character. The grapes were carefully picked by hand and sorted prior to destemming. After pressing the must was transfered into stainless steel tanks where the alcoholic fermentation took place at controlled temperature. The wine aged on the lees for 8 months in stainless steel tanks and large oak barrels without malolatic fermentation followed by a period in the bottle before release to the market.
