Cala ìancu - Terre Sicilian I.G.P. - Il Mortellito
Mortellito is the name of the area where Dario Serrentino’s great-grandparents lived in the early twentieth century and where he and his family has established their winery. Today they have about 23 hectares of vineyards located in Val di Noto, in the districts of Bufalefi, Maccari and Cozzo Tronzo, just a few kilometres from the sea from where they receive the cooling breezes.
In the organic cultivation of the vineyards only natural fertilizers are used and there is no use of pesticides. The harvest of the grapes is manual when the grapes are perfectly ripe. The work in the winery aims to respect the character of the grapes throughout the whole vinification process. Fermentation is spontaneous without adding selected yeasts to the must and they do not use wooden barrels when refining the wine to avoid altering the taste of the wine, which must maintain the identity of the variety and the territory that it represents.
