Chablis A.O.C. - Sébastien Dempt
Sébastien Dampt created Domaine Sébastien Dampt in 2007 after working closely with his father and brother for some years.The family has been making wine in Chablis for over 150 years. The estate currently operates 8,5 ha of vineyards.
The grapes used to produce the Chablis of Domaine Sébastian Dampt come from different parcels, but the main vineyard has old plants, more than 45 years old. The planting density is 5500/8000 plants per hectare. After soft pressing, the must rests for a night at a temperature of 12/15°. Fermentation takes place in thermoregulated stainless steel tanks and lasts approximately 15 days at a controlled temperature of 19°. Once the malolactic fermentation is complete, the wine matures on the fine lees for 10 months in steel containers, before being bottled. Chablis is synonymous with minerality and verticality of the wine. This version by Dampt, one of the reference companies in Chablis, is a perfect expression of the territory, rich, mineral and vertical, lean and dry on the palate, satisfying both the expert consumer and those approaching French Chardonnay for the first time.
