Quantico - Etna Bianco D.O.P. - Az. Agr. Giuliemi
The production philosophy of the Giuliemi winery is based on the rejection of chemistry in favor of the application of the principles of quantum physics to wine and of processes that are as natural and spontaneous as possible. The idea of a “magnetic” wine, produced without resorting to chemical substances both in the vineyard and in the cellar, in compliance with Max Planck's theories. According to the personnel involved the study and management of electromagnetic fields in the vineyard, through the measurement and correction of frequencies with the Theos system, would protect plants from parasites and harmful microorganisms and would make the use of fertilizers or other treatments unnecessary. No enzymes or additives are added during the winemaking process: the must ferments spontaneously thanks to indigenous yeasts; the skins are left to macerate for 24 hours followed by racking and completion of fermentation for 30 days at a controlled temperature and the management of electromagnetic waves would allow the rejection of the use of sulphites in every production phase without running the risk of oxidation.
