


Fattoria Abbazia Monte Oliveto lies in the midst of vineyards, olive trees and century-old oak trees. The present-day estate owes its name to the Abbey built in 1340 by Olivetan monks, who chose it as an ideal place in which to grow wine grapes and olives. Today the winery consists of 35 hectares of land, of which 20 are devoted to cultivation of the indigenous Vernaccia grape variety; 10 hectares are planted with olive trees and 5 are of old ilex and cypress trees.
This is a terroir whose growing conditions are unique, and which is characterized by a climate that is mild in winter and with considerable differences between day- and night-time temperatures in summer, thus favoring the production of wines that are particularly scented and intense. The Vernaccia grapes were hand-picked and sorted followed by a soft pressing and the must fermented in stainless steel in the presence of selected yeasts at a controlled temperature of around 18° C. in order to bring out all the wine’s fruity perfumes and aromas. The wine was matured partly in stainless steel tanks and partly in oak barrels for some months.
